<span id="more-17771"></span> My grandmother was born and raised on Ly Son island, then went to town to study sociology, graduated from work, met him, then became a husband and wife. Away from home, she misses the land where she was born and lived during her younger years. It seems that, in order to ease that nostalgia, she often cooks dishes with rich island flavor. Of the dishes that she personally cooked, my favorite is the spinach jelly.</p>

In order to have a delicious cup of spinach, she cooks it very meticulously. My grandfather used to say that summer is sweeter and cooler when enjoying her richly flavored jelly. Before cooking, she soaked the jelly, then washed and added a little lemon to deodorize, then rinsed with water. She shared, if the discharge is not clean, the smell of seaweed remains, making the taste of the jelly not delicious. She put the jelly into the pot, poured the ginseng water into the pot, brought it to a boil, about fifteen minutes, put the golden brown sugar and ginger in it and stirred it, when the vegetables were cooked, turn off the stove. When cooking, you have to work hard to watch the fire so that the jelly fibers are not overcooked to keep the crispy and delicious. After cooking, pour the jelly into a bowl to cool, the jelly will solidify into a jelly. Her spinach jelly has an extremely eye-catching yellow color, and there are small strands of ginger on the top of the cup. The jelly is crispy and has a sweet taste with the aroma of ginger. I also don&#8217;t remember the first time I ate the jelly that she cooked, only knowing that it was the jelly that followed me throughout my childhood years. When I go to school away from home, she cooks jelly and sends it as a gift, a gift that encapsulates all the love and taste of home. Now, I sometimes visit the market to buy dried seaweed to cook. Enjoying the spinach jelly, I miss my grandma, I miss my childhood memories.</p>
